Em’s Sweet Potato Ground Turkey Patties

Ladies and gents, we did something tonight.

We created some culinary magic after a very long day, with ingredients in the fridge that needed to be used.

The sweet potatoes were hanging out in a bowl, I remembered I had baked them the other day to use as a side with my lunch, little did I know no lunch was going to be made u til today(lol, life happens, ya know!?)

The ground turkey I had in the fridge was also needing to be cooked, so I thought, ‘what if.. I mix the sweet potatoes into my ground turkey and spices as a moisturizing agent..?’ Best decision I’ve made in the kitchen in a while let me tell you!

Mix-ins for Ground Turkey

Let’s get to the steps we took to get the final mixture:

The very first thing I did was turned the oven on to bake at 375°F, got my baking sheet covered in aluminum foil and put a bit of olive oil on there evenly.

Second and main steps, I took the ground turkey and added a generous amount of onion powder, garlic powder, tarragon, and Worcestershire sauce, along with one egg and Panko bread crumbs.

Separately, I added freshly squeezed juice from an orange I had handy into the sweet potatoes, then put that into the ground turkey mix, and mixed it on up!!

Lastly, I made the turkey mixture into larger patties, instead of my typical small meatballs – they were more like flat, medium sized patties versus a rolled up ball. Those went into the baking sheet and into the oven for 22 minutes!

That’s it!!

Uncooked Patties

They taste amazing and are cooked through perfectly. Not dry at all, and you have that amazing sweetness of the sweet potato with the saltiness of the Worcestershire sauce.. it’s basically like Thanksgiving in a patty. Which makes me then think, WE COULD TOTALLY PAIR THIS WITH CRANBERRY SAUCE. *angels singing*

Happiness, is knowing your lunch at work is going to be DELICIOUS. 😁

Cooked Patties

Ingredients:

1 LB lean ground turkey

2 sweet potatoes, cooked and mashed(if not already cooked on hand, prick holes all over two sweet potatoes, then bake at 400° for 1 hour)

2 tablespoons onion powder

2 tablespoons garlic powder

1 tablespoon tarragon

2 tablespoons Panko breadcrumbs

1 teaspoon olive oil

1 egg

The juice of half an orange

1.5 tablespoons Worcestershire sauce

Steps:

Foil baking sheet, spread a little olive oil on the aluminum foil.

Turn oven on to bake @ 375°F.

In a bowl, mix ground turkey with all seasonings above.

Add sweet potato mixture to ground turkey mixture.

Make semi-flat, medium sized patties. Put on baking sheet and bake for 22 mins. Enjoy!
